I have it, and I’ll share it with YOU!
Many many years ago, my friend Natalie gave me the most delicious recipe for banana bread. OH MY WORD, I’m telling you, this is the most tasty banana bread ever! It is good all by itself, but lots of times I add walnuts and chocolate chips and it is TO DIE FOR.
I was talking about making this while I was on twitter today and the recipe was requested, so I’m sneaking in a recipe post behind the scenes here at The Inspired Room!

Gluten-Free Chocolate Chip Banana Bread
1 cup white sugar
1/4 cup butter, softened
2 ripe bananas (they MUST be very brown and ripe!), mashed
1 egg, beaten
1 1/2 cup flour (I use this gluten free flour, Bobs Red Mill 1:1)
1 tsp. baking soda
1/4 tsp. salt
Chopped walnuts and chocolate chips, if desired.
Mix ingredients as listed, mixing in chopped walnuts if you’d like, and turn into a loaf pan.
Sprinkle chocolate chips over the top if you are a chocolate lover!
Bake at 325 degrees, 50-60 minutes.

I recently posted a recipe for the best banana bread too! Haha! My recipe calls for FOUR ripe bananas. Super yummy. But, last night I only had two bananas and decided to give it a whirl anyway. It was still good just not as ‘bananay.’ I didn’t reduce the eggs….I still used the two my recipe called for…and they were jumbo ones. The eggs made the loaf puff up with a nice big rounded top. So…may I suggest…next time you bake your bread…add an extra egg…it just makes it prettier in my book…and I am all about pretty and presentation when it comes to food. Oh…and I had some sliced almonds in the fridge…and boy did that make it pretty too. Unfortunately I didn’t have any chocolate chips. [majorly sad face]
