Popsicle Recipe
Minty Watermelon Lime Popsicle Recipe // yield: approx four 2 oz. popsicles
2 cups 1-inch cubed watermelon
2 tbsp fresh-squeezed lime juice
6 mint leaves, chopped
*Optional: sweetener added to taste.
Instructions:
1. Blend all ingredients together in a blender.
2. Pour mixture into mold and insert stick.
3. Freeze until solid.
4. Run warm water over mold to release popsicle.
Notes:
This is a delicious and nutritious gourmet fruit pop! I used 2 oz. shot glasses for these popsicles. To get the stick to stand up without a mold, I covered the glass with foil and stuck the stick in the middle before freezing. I didn’t sweeten these and don’t think they need it, but if you want a sweeter flavor you can add your sweetener of choice to taste!

These look so yummy!! Definitley making this and pinning too!
These are awesome and perfect for the summer!
Sounds yummy and healthy – the best of both worlds!
The other day we had a watermelon that needed to eaten up! So I encouraged the Hubs to make up a nice frozen Mama drink – we added fresh from the garden basil, mint and lime + some tequila and ice – it was fantastic!!
Yum! I will be right over.
These look so good! Looking forward to trying them.
Oh. My. Goodness. Thank you so much for this recipe! My toddler LOVES popsicles. It’s a borderline obsession! We don’t give them to her too often because of sugar and/or artificial sweeteners. Now I can make these for her and not feel guilty!
The talent at The Inspired Room is not only inspiring….it’s extraordinary!!!
I have no doubt these iced treats are amazing. But, I am totally smitten with the watercolor and lettering. You rocked it Kylee!
