Sliced Cucumber

Halved Baby Tomatoes

Crispy Chickpeas (recipe below)

Fresh Ricotta

Fresh Mint Leaves, chopped

Lemon Juice

Instructions for 1 salad:

Combine Cucumbers, tomatoes and chickpeas. Top with a spoonful of fresh ricotta, 2 chopped mint leaves, a drizzle of olive oil, a splash of lemon, and some fresh ground pepper.

Crispy Roasted Chickpeas:

Toss cooked (canned works great!) chickpeas with olive oil and spices of choice (my favorite is cumin, garlic powder, and sea salt). Cook in a 400 degree oven until golden and crispy. Let cool.

Enjoy!

Artwork is dear! Pretty cukes and tomatoes on the white field–and I think I’m about to make this salad.

Sounds delicious, I have quite a bit of basil so I think I will substitue basil for the mint!

The entire recipe, from ingredients to the artwork, is beautiful. I am going to print, in a high-quality font (!) and make this tonight. The recipe will go in a new binder…fun!

You can’t say you don’t like them unless you’ve tried them roasted! :-) They are DIVINE crunchy little bits. :-) Nothing like before they are roasted!

Yum, this looks so good! I use roasted chickpeas in a quinoa veggie casserole and they are so delicious. Roasting and spices make them so much better than their normal selves! :) Thanks for the recipe– will be making this during the week.
