It’s crazy how unsettling it is to have your home turned upside down so painters and contractors can come in and work on your house. While it is always exciting to finally have the opportunity to start the projects (so no complaints from me) it can feel a little awkward to move around freely when all your furniture is covered in plastic or shoved into another room.

You can see the state our living room was in while we had painters here, with my dining room table buried in there somewhere! Our recipe was for seared chicken and miso udon noodles with sautéed sugar snap peas and pea tips. I’ll admit I had never heard of “udon” noodles, but then again, I’m not a super creative chef. I really want to be adventurous because I love to eat good food, but I tend to fall back on a few basics I’m comfortable cooking.

I love ordering from Blue Apron, there is always a new recipe or ingredient to try. But often what is even more exciting to me is that the food is already shopped for, measured out and ready for me to prepare. I love saving time and not having a big hassle! And now I can say I also adore Udon noodles. Who knew?

While this meal was not something I would have thought to create on my own, it was so tasty and simple to make. I would definitely make it again. It was a winner!

My daughter Courtney and I always have fun preparing dinner together when we receive our Blue Apron box. The guys in our house start circling around the kitchen asking when it will be ready because they know it’s going to be good!

    I’m dreading having my kitchen redone in October. I know living without a kitchen will be a great challenge especially since I have 2 small kids and a dog. My poor dog hates all the noise; banging, nail gun sounds etc. She gets very afraid and starts shacking. but I guess the outcome will be well work it.

      Remodeling and having workers in the house is unsettling for the dogs. They really don’t like to have their habits disrupted. But they do seem to adapt and in the end it’s worth it!

    We have been doing a little painting recently and so we have no pictures on the walls, the fire is covered up, and the curtains aren’t hanging up and I don’t like it! I can’t wait to return to normal again!

      I’m with you on that, Jenny! I’m not liking the disorder at all. I love getting to watch the transformation but it is driving me nuts to not feel settled. Hang in there!

    I try not to give too much “parental advise.” Even though I have raised 4 successful kiddos, I still feel like there was so much more I could have learned, and applied, as a parent. Best advise I ever got….hug often and NEVER be the first to let go. Second, the louder they get, the softer you should speak…think about it, they have to quiet down to hear you…lol! But the most important advise I can give, and one we practice to this day…eat dinner together at the table/bar as often as possible, even if it just a quick sandwich in the midst of chaos. NO tvs, phones, or distractions…just mom and/or dad and kiddos! EVERY chance you get eat a meal together and talk. It is the best 30-45 minutes a day you will spend…and even as adults, my children know and respect the “dinner routine.” Without fail! Upside young parents…you will teach your children how to sit at a table and eat a meal…going to a restaurant will be soooo much more enjoyable if you have taught your children how to respect meal time!

    My brother , who is a very cook, decided to try Blue Apron for some fresh inspiration. He and his wife absolutely love it and even after several months, say the haven’t had a meal yet that the haven’t enjoyed and several that they really loved. It wouldn’t work for my picky bunch but I think it sounds great and thought I would pass on the positive review. Good luck on the project and hang in there. I guess it always gets worse before it gets better right?

    What a great way to ease some of the hectic feelings that accompany home improvements. I think we’ve all probably been there at one time or another, but Blue Apron is something that would have been great to have. Your photos really helped to give a clear idea of what is involved.

    As you probably know, wood blocks are best to keep your knives sharper for longer. Boos is a great brand!

    I was excited to try Blue Apron, but was extremely frustrated at how long the meals took to prepare. Our meals included several items I had never used, so I had to look up on youtube how to peal and cut some of the vegetables, for example. It’s been about a year since we tried it, so I can’t remember all the details, but while I liked the concept and the instruction card, I felt that things took much longer than 40 minutes to prepare. I know the first meal took so long, my husband was ready to order pizza, and I’m certainly not a novice in the kitchen, as we’ve been married over 25 years.
