Gluten-free + vegan chocolate chunk cookies with walnuts
One of our indulgences during this quarantine has been baking cookies. I’m gluten-free and have found that many of my old stand-by treats don’t quite taste the same. That’s good in that we don’t eat many treats, but sometimes you just want a little something really yummy, ya know?
Well, I’ve finally perfected a recipe for gluten-free chocolate chip cookies to the point where they don’t even taste gluten free! Of course, if you aren’t gluten free you can totally just use regular flour and they will be delicious.
I originally got this recipe from my daughter Kylee. Her husband started baking them every week and they loved them! I knew I wanted to try to make our own version with gluten free flour and a few of our own twists like dark chocolate chunks, chopped walnuts and sea salt flakes sprinkled on top for a final gourmet finishing touch.
I’m happy to say they are DIVINE!
ORIGINAL RECIPE from Pick Up Limes
INGREDIENTS
1/2 cup refined coconut oil packed not melted (the refined coconut oil makes a difference in the flavor!) Refrigerate for 30 minutes or until firm if it has liquified.
2/3 cup packed light brown sugar
3 T maple syrup
6 T plant-based milk (we use this one)
1 T pure vanilla extract
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
2 cups Bob’s Red Mill Gluten Free 1:1 flour
1 cup organic dark chocolate cacao chunks (use dairy free chips to make these vegan)
Chopped walnuts, if desired
Optional: Sea Salt Flakes for topping
DIRECTIONS
Preheat the oven to 350 F
Mix the coconut oil and brown sugar with a fork. Add maple syrup and mix until well combined. Combine the milk, vanilla, baking soda, baking powder and salt.
You can firm the mixture in the fridge for 15 to 30 minutes (especially if it’s a warm day!) so the cookies don’t flatten or spread out too much when baking.
Add the flour to the bowl and stir until just-combined, gently fold in the chocolate chunks and walnuts (if desired).
Form into small balls and place 2 inches apart on cookie sheet lined with baking paper.
Bake at 350 for 12-15 minutes until edges are golden and tops are set.
Top with sea salt flakes while still warm.
We made up a little gift box of cookies for a friend this week to brighten their day. A little kindness goes a long way!
Let me know if you make these, I think you’ll love them as much as we do.
Enjoy and much love to you, friends!

In a family where we eat mostly gluten free/dairy free/plant-based we have tried a lot of different recipes and items from various stores! Here’s round up of some of the food we order!
Wonderful recipe for my celiac husband; I am also celiac from when I was a child and have forgotten about making GF dessert snacks!
Enjoy!!
Sounds like a great recipe.
Thanks for saying you can sub regular flour. Presuming you could use dairy milk in lieu of plant based?
How long do they bake at 350 ? They look delicious!
Hi Judy, so sorry that line was accidentally deleted from my post! I added it back in this morning :). Thanks for letting me know!
Looks delish!
Where did you get the cute heart stickers?
The heart stickers came in a pack of lots of cute ones, here’s a link to them! :) > https://bit.ly/2A5tZTi
I see a darling little White House with removable lid and spoon. Is that for sugar? Can you tell me where you found it? I just love it!
These sound yummy! I do eat gluten free and bake that way, but the only flours I use are coconut flour, almond flour or Lupin flour. Can I substitute any of these flours for the standard “ gluten free flour you use ( and what proportion? ). I done eat any grains or grain flour. Thanks! I’d love to try to make these if I can substitute with the flours I do use.
I’m sure you can but I haven’t experimented yet. I have coconut and almond flour but not lupin. Let me know if you try this recipe with grain-free substitutions, I’d love to know!
It’s called a Salt House, I believe I got it at Wayfair but they haven’t had it in stock for a long time. I keep hunting for it and if I ever find it again (or if you do and share it with me!) I will share it here!! It’s such a cute little thing.

We typically like our chocolate chip cookies thin and crispy on the edges with a bit of gooey on the inside. I wonder if you spread these out on a warm day with soft dough if that works out well too? These look awesome and with some hot coffee or hot chocolate!? Oh my!!! We will have to try the recipe out for sure. Thanks for sharing:0)
Yes if you leave them in you can get crispy edges! They are so yummy, soft and fluffy on the inside!

First, I never miss your posts since I love your blog. Lastly, I would spend the money on some evergreens since this year more than most a lot of people are focused on their gardens and yards. Mine could use some winter interest. Thanks for the giveaway! Also, these cookies look too good to not make! Thanks for the receipe.
It’s good to have these recipes for when I need a treat for gf friends! Thanks!
I can’t wait to try these. Our newest niece has a wheat allergy and we are always trying to find ways to change our favorite recipes for her.
My son who is Vegan would love these cookies. Thanks for sharing.

I’m really enjoying the Homestyle Saturday series!! Thanks!
I can’t have gluten or dairy so these are perfect for me! I’d like to try that salt, too. I use Real Salt on my food but never tried flaky salt.
Great recipe! Thanks. I enjoy trying new ones.
These look delicious! Always love some salt on a cookie.
These look delicious and I totally need to track down the salt flakes. I always enjoy your posts and love the Home Style Saturdays.
Looks like a great recipe. We can’t do the coconut oil. Will try avocado oil instead.
Thank you for this. I’m celiac and have waited for over 13 years since diagnosis to have a decent chocolate chip cookie!
Love sea salt with chocolate! Thank you for Home Style Saturdays! I look forward to it each week. I have a PayPal account that I used infrequently before the pandemic but have found I am using it much more now. It makes me feel more secure when I order online from sites I am not familiar with. This has occurred more often as I hunt for hard to find items during this crazy time.
Always appreciate great GF recipes. One of the members in my quilt group has a gluten allergy, and I like to change the treats I make for her when we have our meetings.

The maple syrup and dark chocolate chunks will really up my game next time I bake GF CC cookies! Thanks for sharing your secrets.

You raised your daughter very well – she shares her ‘yummy’ recipes with you! :-)
Can you imagine anyone putting up their nose at a chocolate chip cookie or a give-away, not me, put me in the winners circle as the chocolate dries on my chin. :-)
There is NOTHING not to love about Home Style Saturdays and all the things you
lovely blogging ladies bring to the world, two hundred times! I approve of your great job, two dolphins clapping here. :-)
These look amazing and easy to make
Great recipe for my grandchildren Thank you for a beautiful post
These cookies are on my list to try!
Can’t wait to try these! I went gluten (and sugar) free about 6 months ago and have lost 23 pounds and feel AMAZING! When I do have a small amount of gluten, I don’t feel well. It’s better for my thyroid issues I have too. Thanks for sharing!
I know several people with gluten issues and will give this recipe a try! Do you know if these freeze well?
Thanks for this recipe, I think it will be a new favorite. I have been in the mood to bake a treat and this is going to be it!
I made these cookies today. They were amazing!! I’m vegan and these are the best and will now be my base cookie. I may try adding a little peanut butter next time and no walnuts.
My Hubby has turned Vegan and this sounds yummy!
Will definitely have to make these!
Making these for my gluten free friends….
