Best Gluten-Free Banana Bread Recipe (With Chocolate Chips + Walnuts)

Anyone else baking more often these past few months? Maybe the baking will slow down around here now that summer is beginning. But we’ve actually enjoyed cooking and baking more than ever. Last week I shared The Best Gluten-Free Vegan Chocolate Chip Cookies. Today I wanted to share my recipe for gluten-free banana bread! I’ve been making this banana bread for years, but ever since I was diagnosed with Hashimoto’s I started making it gluten-free simply by substituting the flour. It’s just as delicious either way!

This is the flour I’ve been using, but if you make it grain-free or with any other flour I’d love to hear how it turns out!

I’ve always been a big believer in making every day life lovely and finding joy in the simple things. Being home so often lately could easily make us feel stir-crazy, but I’ve been using this season to be more intentional in creating an environment and daily rituals that inspire us. The comforting smell of banana bread baking in the oven definitely brought more joy to our home that day!

1 cup white sugar (I’ve also made this with applesauce instead of sugar!)

1/4 cup butter, softened

2 ripe bananas (they must be very brown and ripe!), mashed

1 egg, beaten

1 1/2 cup flour (I use this gluten free flour, Bobs Red Mill 1:1)

1 tsp. baking soda

1/4 tsp. salt

Chopped walnuts and dark chocolate chips, if desired.

Mix ingredients as listed, mixing in chopped walnuts if you’d like, and turn into a greased loaf pan.

Sprinkle chocolate chips over the top if you are a chocolate lover!

Bake at 325 degrees, 50-60 minutes.

YUM.

Ever since I was diagnosed with celiac, I have been looking for recipes for GF yummies. The Bob’s Red Mill 1:1 makes it easier – will look for it in my stores here! Did you change the painting in your kitchen from the nautical scene to the sailing ship?

1c. Sugar to 1.5c. Flour seems like a lot of sugar, especially for a single loaf. When you sub applesauce, how much do you use?

You can try 1/2 Applesauce and 1/2 c sugar and see what you think to start out. It might change the consistency if there’s too much applesauce but it might not! It’s been awhile since I tried that. You can do 1/2 brown sugar or coconut sugar if you prefer as well. I’ve also just cut the sugar down and it‘s fine!

This recipe is very familiar. I have the exact same recipe which I got a long time ago. It is called “Aunt Holly’s Banana Bread”. I make it all the time. It’s all in one bowl and quite simple. I also use Bob’s Red Mill 1 to 1 flour. I got monk fruit in a granulated form like sugar and have used that in place of regular sugar. Works great and no one can tell the difference. I use slightly less than the recipe amount when I use monk fruit.

Yum! That sounds great! I’ll try it sometime. I have tried other sugars and less sugar and no one has mentioned it tasting different so I think it’s forgiving!!

Yum! Going to try this! We also love that GF flour – so much easier to swap with our old favorite recipes.

From my family, and especially my 6 year old, THANK YOU for sharing these GF recipes. Just at the start of covid we realized my son is allergic to gluten and dairy. He developed an allergy to both in the last 18 months. For a little guy, this has been so hard! We made your GF vegan cookies last week and he was so happy! I’m so excited to try this with non-dairy butter and dairy-free chocolate chips. Thank you!!!!

Thank you for the lovely recipe, I’m just waiting for it to cool, so we can all try it. It looks fabulous and it was so quick and easy to make. Thanks for sharing your ideas, it’s raining and gloomy here today and this will cheer us up.
