Salad:
Sliced Cucumber
Halved Baby Tomatoes
Crispy Chickpeas (recipe below)
Fresh Ricotta
Fresh Mint Leaves, chopped
Lemon Juice
Olive Oil
Ground Pepper
Instructions for 1 salad:
Combine Cucumbers, tomatoes and chickpeas. Top with a spoonful of fresh ricotta, 2 chopped mint leaves, a drizzle of olive oil, a splash of lemon, and some fresh ground pepper.
Crispy Roasted Chickpeas:
Toss cooked (canned works great!) chickpeas with olive oil and spices of choice (my favorite is cumin, garlic powder, and sea salt). Cook in a 400 degree oven until golden and crispy. Let cool.

Made this lite super delicious salad as a main dish, and served it with crusty bread. My husband loved it , will make it again soon!!!

Yum, this looks so good! I use roasted chickpeas in a quinoa veggie casserole and they are so delicious. Roasting and spices make them so much better than their normal selves! :) Thanks for the recipe– will be making this during the week.
