With Thanksgiving coming so soon, we are thinking about our Thanksgiving menu! One thing we know for sure…this gluten-free vegan apple pie will be a part of the festivities. Courtney made us this pie for the very first time a couple years ago and it was SO good that from then on, it became a staple dessert for every family gathering.
You can find the simple pie recipe she uses HERE (just use gluten-free flour to make it gluten-free—this is the flour she uses (Bob’s Red Mill 1:1 Gluten Free Baking Flour).
Courtney made these two pies last week just because. “No need for a holiday to make a pretty pie”, she said. I agree! Any day is a good day for pie. :) You might remember her other pies we’ve shared here: Easter Pie, a Woodland Themed Pie, and her first pie she made with autumn leaves. She’s often asked where she gets her pie crust cutters to make all the cute designs, so we thought we’d share some of those here today. We also did a live video together last week sharing her favorite tools and tips!
