Woodland Themed Gluten-Free Vegan Apple Pie

Hi friends, it’s Courtney here today! So, I’ve realized in the last year that I’m a big fan of making pies. I made my first pie last year for Thanksgiving (with fall pie crust cutters), and it’s become a fun hobby for me ever since. I’m not a professional by any means, but I’ve quite enjoyed the process of making pies with different ‘themes’. This woodland pie turned out pretty cute if I do say so myself. :)

I thought I’d share it here today for some fall baking inspiration!

I make this pie gluten-free and vegan. You can find the simple pie recipe HERE (just use gluten-free flour to make it gluten-free—this is the flour I use (Bob’s Red Mill 1:1 Gluten Free Baking Flour).

The crust is delicious and crispy! Gluten-free flour isn’t the easiest to work with, but it’s worked out okay with a little extra care. I find it extra helpful to use pie crust cutters like these with plungers if you’re using gluten-free flour. The big cookie cutters I used for this pie were a little more tricky to keep the dough together. I also love the extra embossing detail of the pie crust cutters!     I have to be gluten and dairy free, too. So I love this apple pie recipe and know the angst of trying to work with making gluten free dough that wants to fall apart. I was fortunate to find gluten free pie crust in Sprouts Farmer’s Market but it is only the bottom crust which is fine for pumpkin pie and quiches but I would have to make my own crust for the top of an apple pie. These Fall pie crust cut outs look so cute. I just might have to buy a set. Thanks for posting this.

    Please fix or just say what the product is.

    I must use gluten free flour and cannot find one that tastes good.
